The other day I walked past the discounted cart in the grocery store and spotted some ripe bananas. I thought what a great deal, and that it would be incentive to make lots of recipes with them.  Well, a week went by and they continued to get more spotted and brown  every time I looked at them.

Who’s been there? I can’t be the only one. I was really wanting a snack that was easily transportable and offered a quick energy fix. I did some brainstorming and created these delicious energy balls which can help to get rid of some of those ripe bananas.

For a vegan recipe, swap out the raw honey for brown rice syrup.

Banana Bread Energy Balls

Yields 16 balls

Ingredients

  • 1 large ripe banana, mashed
  • 2 cups gluten-free oats
  • 1 tablespoon sunflower or pumpkin seed butter (you can sub with peanut butter if you do not have an allergy)
  • 2 tablespoons raw honey (use brown rice syrup for vegan)
  • 2-3 tablespoons water
  • 3 tablespoons mini chocolate chips (Enjoy Life Foods for nut-free)

 

Instructions

  1. Add oats to a food processor and process until a flour forms.
  2. Add seed butter, banana, raw honey, and water. Add one tablespoon of water at a time to help blend.
  3. Pulse until a dough ball forms.
  4. Mix in chocolate chips.
  5. Roll into small one inch balls.
  6. Store in the fridge or freezer until ready to be eaten.
