I had a head of cauliflower in my fridge and couldn’t think what to make of it, so I decided to roast it with farm fresh zucchini, raw cheese and spices. Husband approved!

Raw cheeses can be found at your natural food store and surprisingly even at Costco! Look for ‘unpasteurized milk’ in the ingredients list. Raw cheeses contain the enzyme lactase which helps digest the protein in cheese.

Pasteurized cheeses have been heated which destroys the enzyme making it difficult to digest, and some get gassy or bloated. If you have difficultly digesting cheese, try the unpasteurized varieties in small amounts to see how your body reacts. Look at the label and in the ingredients list, it will state made with ‘unpasteurized’ or ‘raw’ milk.

Cheesy Baked Cauliflower

Recipe

Ingredients
1 medium cauliflower head
2 ounces raw gouda cheese
2 ounces raw mozzarella cheese
1/2 medium zucchini
1/2 teaspoon onion powder
1/2 teaspoon garlic powder
1 teaspoon chill powder
unrefined sea salt
avocado oil

Method
Steam cauliflower head for 10 minutes until tender.
Meanwhile, slice cheese and zucchini into 1/2 inch strips 3 inches long.
Preheat oven to 375F.
Remove cauliflower head from steamer and place on a pan. Stick zucchini and cheese sticks evenly throughout the cauliflower head.
Sprinkle onion powder, garlic powder, chili powder and salt over top the cauliflower.
Brush avocado oil evenly all over the cauliflower and put in the oven for 10 minutes until baked golden brown.
