  The other day I walked past the discounted cart in the grocery store and spotted some ripe bananas. I thought what a great deal, and that it would be incentive to make lots of recipes with them.  Well, a week went by and they continued to get more spotted and brown  every time I looked at them. Who’s been there? I can’t be the only one. I was really wanting a snack that was easily transportable and offered a quick energy fix. I did some brainstorming and created these delicious energy balls which can help to get rid of some of those ripe bananas. For a vegan recipe, swap out the raw honey for brown rice syrup. Valentine’s Raspberry Chocolates Recipe Yields 12 chocolates You will need a chocolate silicone mold. Servings may vary depending on the size of the molds.  Ingredients 1/2 cup dairy-free chocolate chips (I used Enjoy Life foods brand) 1 tablespoon coconut oil 1 cup raspberries 1 tablespoon arrowroot powder* mixed with 1/4 cup water 1 tablespoon maple syrup or sweetener of choice   Instructions 1. In a small pot, heat and mash raspberries until puree forms, add maple syrup. 2. Combine arrowroot powder with water (make sure the powder is fully dissolved). 3. No Bake Protein Cake Balls Super yummy no bake protein cake pops, with a nut-free option. Makes 6 balls ½ cup oat flour 1 tablespoon coconut flour 1 tablespoon raw unpasteurized honey 2 tablespoons chocolate vegan protein powder 2 tbsp. raw cacao powder 3 tbsp. dairy free milk- or more to help clump together 2 tablespoons sunflower butter (ie. Sunbutter). You can use natural almond butter or peanut butter if you have no nut allergies. I love cooking or baking with fruits and vegetables that are in season and right now as there is an abundance of zucchini available. What better way to use them, then to add them into muffins with chocolate. I adapted this recipe from Oh She Glows, because sometimes you just don’t have all the ingredients on hand or you want to add an ingredient that you like.
